Loaded Twice-Baked Potatoes

What You Need

  • 3 large baking potatoes (1-3/4 lb.) 
  • 1 cup plus 2 Tbsp. cup sour cream, divided 
  • 1/4 cup KRAFT Grated Cheddar Cheese, divided 
  • 3 slices bacon, cooked, crumbled 

Let’s Make It

  1. Heat oven to 400°F. 
  2. Prick potatoes in several places with fork.  Bake potatoes 1 hour to 1 hour 15 min., or until potatoes are fork tender.   
  3. Reduce oven temperature to 350ºF.  Cut potatoes crosswise in half.  Scoop out centers, leaving 1/8-inch-thick shells.  Place potato flesh in medium bowl; mash.  Add 3/4 cup sour cream and 3 Tbsp. cheddar cheese; beat until fluffy.  Spoon into shells, mounding filling as necessary; place in shallow baking dish.   
  4. Bake 30 min.; top with remaining sour cream, bacon and remaining cheddar cheese.
